The Daughter saw a recipe for coconut shrimp in the newspaper. She convinced her grandmother to help her prepare. They deveined them and prepped the dredge mixture. I ended up having to actually do the frying. I was about a third of the way through when we had enough to sample. That is when I discovered a funny texture. Somehow they forgot to peel the shrimp. I took a break from cooking to peel the shrimp. The homemade mango jam was a delicious topping to the (peeled) shrimp.
