Eggs are one of the hardest things to recreate on a plant-based diet. Last night I was searching for vegan brunch ideas and I found this Buzzfeed list. The omelet recipe seemed doable so this morning The Daughter made some. They were delish and they definitely pass for egg omelets for me. We added avocado and sauteed veg (carrots, muchrooms, radishes) and included panckakes and jam for a complete meal.
